In August 1999, William Frachot<\/a> took ownership of the hotel and became the chef of its restaurant. This Dijon institution underwent a complete transformation in 2019 under his leadership. Today, both the restaurant and the hotel beautifully blend Burgundy’s heritage with contemporary elegance.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Originally a post relay, the building dates back to 1863.
In the 19th century, as railroads expanded into cities, these post relays gradually transformed into inns, officially ceasing operations in 1873.
