The Hostellerie du Chapeau Rouge
A true institution in the Capital of the Dukes, this historic 1863 building offers 28 contemporary rooms and suites. Fully renovated in 2019 under the direction of William Frachot, the Hostellerie du Chapeau Rouge bridges the rich history of the region with a modern spirit, much like the philosophy behind its celebrated cuisine.

1999
In August 1999, William Frachot took ownership of the hotel and became the chef of its restaurant. This Dijon institution underwent a complete transformation in 2019 under his leadership. Today, both the restaurant and the hotel beautifully blend Burgundy’s heritage with contemporary elegance.
1932
The building underwent renovations in 1932 under the architect Louis Desbois.
1863
Originally a post relay, the building dates back to 1863.
In the 19th century, as railroads expanded into cities, these post relays gradually transformed into inns, officially ceasing operations in 1873.
The Hostellerie du Chapeau Rouge was founded by Mr. L. Peillein, its original proprietor.
