My roots, my desires, and my encounters… each dish I create tells a part of my story, enriched by the treasures of our terroir, local producers, and friend vintners. From the Côte d’Or to the Morvan, through the seasons that mark our days and the winding Saône river, I invite you to experience a reimagined Burgundy.

My Journey
My Inspirations

In 1999, I decided to settle at the Hostellerie du Chapeau Rouge after years spent working alongside iconic figures such as Jacques Lameloise, Bernard Loiseau, and Fabrice Gillotte. These experiences, enhanced by travels to England and Canada, have shaped my vision of cuisine.

In 2003, my first MICHELIN star acknowledged this work, marked by boldness and precision. Ten years later, in 2013, the achievement of a second star solidified my new philosophy: contemporary terroir cuisine, where each ingredient tells its own story.

Entering, in 2018, the prestigious club of GRANDES TABLES DU MONDE was a significant recognition. Yet, day after day, my true mission remains the same: to transform the gems from our producers into emotions, offering exceptional moments to my guests.

My true collaborators are these passionate producers, artisans of the land and farmers. Whether they are from Burgundy or other French terroirs, each of their products inspires my creations. Always with that unmistakable touch that honors our region.
